Tip: Wood-Steamed Meat

     Don't assume that wood can only add to meat when it is burned for smoke; when cooking in a steam oven the water vapor can carry lots of flavor onto the meat too! Here is dried rosemary bush steaming with some lamb for New Year's Eve. I'm thinking of it as kind of a lamby/steamy version of ham in hay.
